It was “that” kind of day today. Or maybe I should rephrase it to it’s been “that” kind of month.
My oldest (still a baby herself at 23 months) was a mess. My youngest was a mess. There were few moments when one of them wasn’t crying.
After I successfully got both crying babes to nap…the pure bliss only lasted a good 30 minutes…I frantically threw together a soup.
I don’t typically “throw” together anything… I’m a girl that needs recipes. However, out of desperation, I pulled some items out of my fridge and freezer and came up with a new favorite!
A glimmer of success at the end of the day and a new soup recipe that came together easily! You can use store bought stock or broth in this recipe, but for a huge nutritional boost, check out our perpetual bone broth recipe. Sausage, Bean, and Potato Soup
Ingredients:
3 Italian Sausage
4 green onions, chopped
1 Tbs garlic, crushed
2 medium potatoes, cubed
3 cups cooked white beans (Great Northern, Cannellini, etc)
1 tsp dried rosemary
1 tsp salt
1/2 tsp pepper
1 cup dry white wine
6 cups chicken broth
Directions:
Remove sausage from casings and brown with onions and garlic and in a large soup pot. Season with rosemary, salt, and pepper and saute an additional 2-3 minutes.
Add wine and broth to the pot. Stir in potatoes and simmer until almost tender.
Add cooked beans and cook an additional 15 minutes.
Serve and enjoy!
